As a professional game artist, I can tell you that most original
work done for video games is considered "work for hire" and the
company retains full ownership of all works.  Personal use of work
done for a game (i.e. for a portfolio) has to be approved by whoever
owns the rights to it.  Companies usually approve showing content
from a published or cancelled game in a demo reel, so long as the
artist asks permission. They will probably want to keep the wraps on
art for a game that is still under development or has been
postponed.  It can also get tricky when the company has licensed
someone else's IP.
