Interesting question. The problem exists only if the development
company survives the cancellation of the project. What could happen
is a reuse of part of the code for other projects but that is
simpler to say then to do depending by the quality of the code. In
the case of UOX, they have for sure an Unreal Engine license they
can reuse for a new project, the tools created for the Engine. The
Art work could be reused for the future ("still to announce") UO
project, who knows. For sure Liquid Development (who created part of
the Art Work) has started using the UOX art work for PR, see the
many pictures and the World Building / Character Animation reel on
their site

Quite impressive Demo reels, especially the World Building one. The
Unreal Engine seems to take a central position in the middle ware
for MMOGs as more developing companies are using it (see for example
Lineage 2, Vanguard, etc.). On the graphic side doesn't seem to have
rivals and being largely adopted means a large set of tools,
companies like Liquid Development, proficient in its use who you can
outsource part of the art creation, etc. On the other side I wonder
if the customization necessary to support features like dynamic
areas, better world building tools, large areas, etc. can outrange
the benefits of the Engine. So: middleware licenses, part of the
code (depending by the code quality), developed in-house
tools. Anything else left?
