What statistics in particular are you looking for? Number of NPCs
with schedules? Complexity of schedules?
If you want info on U7, the Exult team are the people to talk
to. http://exult.sourceforge.net/ . (Well, they are the people to
talk to if you don't have access to the original programmers, I
suppose. :) They've got the usecode pretty deciphered and could tell
you whatever you wanted to know, probably.
And yeah, there are a couple of quests that I can think of that
required you to catch someone at night or at least while not at
work, in both U7 and U8.
