It's variety and good graphics.  From a pure game design standpoint,
multiple races offers very little as you note.  But multiple races
offer a very _subjective_ entertainment value to players.  Some
players think trolls are just plain cooler than big, smelly humans.

Don't underestimate the appeal of variety for variety's sake.
